In an appts. for the treatment of meat, partic. for the curing of pieces of meat with brine and the subsequent packing of the moulded prods. esp. in cans, of the known type comprising a vessel with side walls and a bottom, provided with stirrer units having at least one paddle projecting therein, for kneading and massaging the pieces of meat, (a) the surface of the paddle or paddles furthest from the centre of the vessel can move along an eccentric or elliptical path so that as it does so the pieces of meat are kneaded or massaged between its surface and the walls of the vessel (b) elements are provided for driving the or each paddle along such eccentric or elliptical path. Permits treatments of a wide variety of meat prods. and partic. whole hams and shoulders with fat or with fat and rind. |
