The compsn. may contain >1 sweetener. One is pref. a dipeptide, e.g. L-aspartyl-L-phenylalanine methyl ester (I). The other sweetener is e.g. saccharine, a cyclomate or sucrose. The sweetening compsns. may be used in beverages, candies, cereals, desserts, gelatin, etc. They find use in virtually any foodstuffs of pH >=5. The taste modifiers are effective at moderately low levels and do not impart an added sweetness to the compsns. In an example, a puffed cereal product was prepd. contg. corn syrup "MOR-REX" (RTM), safflower oil, (I) and alum. It left no lingering sweet after-taste in the mouth. |
