<p>A cheese mfg. depositor for extruding and draining cords prior to moulding is of the type having an encased set of vertical, cylindrical depositor tubes which are fed at their open tops with wet curds. At the bottom of the tubes a horizontal guillotine blade cuts off extruded cheese lengths ready for final moulding. The casing of the depositor tubes is topped by a jacketed header tank which serves as a manifold feeding wet curds simultaneously to all the depositor tubes. The inner walls of the jacket is perforated so that when drains into the jacket space to be channeled away, pref. via the casing space around the depositor tubes. The tubes themselves have a limited number of perforations for drainage into the casing space, but must have a smooth inner surface which does not impede descent of curds by gravity alone. Pre-moulding extrusion and drainage of curds in the mfr. of cheese, partic. soft paste or pressed paste cheese as well as the blue veined variety.</p> |
