<p>The guard cover for a commodity slicing machine sharpener extends over and protects the otherwise exposed knife edge at the knife sharpening area. The guard protects the knife edge at all times regardless of whether the sharpener is in the sharpening position, storage position, or is being moved between these positions. The sharpener employs a non-rotatable honing stone which seeks proper honing relationship with the knife upon coming into contact therewith. A latch holds the sharpener when in the sharpening position and prevents it from being returned to the storage position until released. The latch release is position dependent so that the operator's hand and fingers should be in a certain predetermined position on the sharpener housing, away from the knife edge, to operate the latch release.</p> |
