1492370 Food thickeners; milk gels MERCK & CO INC 5 Oct 1976 [8 Oct 1975] 41320/76 Heading A2B A composition suitable for forming instant milk gels comprises 75-93% carbohydrate sweetener, sufficient acidulent to give a pH of 3.8-4.3 when blended with sufficient milk to form a gel, and 2.5-10% of thickener components of which 13-35% is locust bean gum, 13-35% xanthan gum, 14-60% carboxymethyl cellulose having a degree of substitution of 0.65-0.95, and 0-53% pregelatinised starch. The sweetener may be fructose, dextrose, sucrose or lactose, or saccharin or an alkali or. alkaline earth metal salt thereof. The acidulent may be fumeric, adipic, citric, malic, tartaric or succinic acid. Flavourings and colourings, e.g. lemon juice powder may also be present. |
