After grinding, the skin is extracted for at least 3 hours using an aqueous solution having an acid pH and at a temperature of between 60 DEG C and 75 DEG C. The extract is then separated and thereafter lyophilised. The extract thereby obtained has an anti-inflammatory action, and may be incorporated in cosmetic and pharmaceutical compositions.
