<p>A food prod. having a liq. filled centre cavity within an edible, outer casing. The press, inside the cavity is lower than the press. outside the casing. The casing is pref. made of a spongy confectionery paste into the cavity of which a liq. centre is injected and a suction press. then created. The liq. can be injected at a higher temp. than that of the casing so that differential contraction of the liq. lowers the press. in the cavity. Used e.g. for prodn. of rum truffles. The reduced cavity press. minimises leakage of liq. during subsequent handling and packaging.</p> |
