PURPOSE:To prepare freeze-dried bean curd effective in lowering the cholesterol level in blood plasma by using lecithin and/or phytosterol as components. CONSTITUTION:In the preparation of freeze-dried bean curd by conventional process, the bean curd is incorporated with (A) 1-10% (preferably 2-4%) of lecithin and (B) 0.5-5% (preferably 1-2%) of phytosterol, or (C) 1-10% of lecithin and 0.5-5% of phytosterol. |
