1473222 Peeling fruit and vegetables in caustic solution BASF WYANDOTTE CORP 12 Sept 1974 [13 Sept 1973] 39762/74 Heading A4C [Also in Division C2] Fruit and vegetables are peeled by placing them for 10 seconds to 10 minutes in a caustic solution at a temperature of 130‹F to the boiling point of the solution, removing them and then washing in water, the solution containing from 1 to 30 caustic and from 0À05 to 1À00 weight percent of an anionic surfactant represented by where R is an alkyl or alkaryl group having from 8-18 carbon atoms in the alkyl chain B is hydrogen or R-O-A-, and A is ether oxyethylene or a mixture thereof with oxypropylene groups in which the weight ratio of oxyethylene to oxypropylene is from 0À25:1 to 8:1 and the total oxyethylene and/ or oxypropylene groups represent from 30% to 80% of the total weight of the surfactant. The surfactant may be a phosphate ester and the solution may also contain from 0À01 to 0À05 weight percent of a nonionic surfactant which may be a condensation product of a linear aliphatic alcohol and at least one alkylene oxide.
