Examples describe the treatment of microbial cells produced by fermentation of Arthrobacter NRRL B-3728 with MgO. The product was assayed for glucose isomerase activity. An analogous test was done on cells produced from Streptomycesalbus ATCC 21132, and Bacillus coagulans. In addition to the conversion of glucose to fructose, there is mentioned the conversion of lactose to a mixture of glucose and galactose.
