1501409 Sweeteners TATE & LYLE Ltd 9 April 1976 [29 April 1975 13 Feb 1976] 17831/75 and 05719/76 Heading A2B [Also in Division C3] A process for the extraction of a sweet substance from the fruit of Thaumatococcus daniellii comprises extracting the fruit or a portion thereof with a dilute aqueous solution of an aluminium salt. The extract obtained contains an aluminium thaumatin adduct, i.e. the thaumatin contains bound aluminium. It may alternatively be produced by dialysing an aqueous extract containing thaumatin against an aluminium salt solution. The temperature of the extraction may be in the range 4 to 40‹C. Typical salts which may be used are aluminium sulphate hexadecahydrate, aluminium potassium sulphate dodecahydrate, aluminium ammonium sulphate dodecahydrate and aluminium chloride hexahydrate. The extraction may be effected using the whole fruit or isolated arils. The extract may be purified by using a cationic ionexchange medium, e.g. a carboxymethylcellulose or a sulphonic acid cross linked dextran such as a sulphopropyl resin. The sweetener may then be eluted using an aqueous solution of an alkali metal or ammonium salt of an acid, e.g. citric, tartaric, malic or lactic acid. The pH of the eluate may then be adjusted to 3-45 and the eluate ultracentrifuged. |
