摘要 1414131 Proteinaceous food products UNILEVER LTD 8 Nov 1972 [10 Nov 1971] 52154/71 Heading A2B [Also in Division B5] A stable protein containing food product comprising a protein ingredient dispersed in a thermostable alginate gel incorporating a watersoluble cellulose ether selected from alkyl, hydroxyalkyl and carboxyalkyl celluloses the alkyl radicals of which contain 1 to 3 carbon atoms. The protein ingredient may be derived from any edible animal or vegetable material, preferably refined from protein containing material especially waste fish material. The alginate material may be a polyvalent metal salt especially calcium, of alginic acid. Other additives such as edible salts, flavouring agents, colouring matter and texturising aids may also be incorporated in the composition. The product is preferably prepared by mixing the edible cellulose ether, the protein ingredient and an alkali metal or ammonium salt of alginic acid together with sufficient water to form a sol and extruding the sol into a setting bath containing a solution of the polyvalent metal salt. The so-formed gel may be in the form of filaments, fibres, hollow fibres, tubes, rods or strips, and the extruded element, whatever its shape, is preferably not thicker than 5 mm. The concentration of polyvalent metal salt in the bath is preferably between 0.5 and 15% w/w.
