The emulsion preferably comprises 1-4 parts by vol. of oil, 4 parts by vol. of water and 0.01 to 2.0% by wt. of proteose peptone based on the wt. of water present. A chemical emulsifier may also be present, particularly if saturated triglycerides are present. The emulsion may be used to form a whippable topping. The oil fraction of the emulsion is preferably about 35%. |
