<p>Food in lumps is heat treated in a revolving horizontal drum with perforated walls. The drum is built into a heat insulated housing through which hot air is circulated. The hot air stream enters the drum at a point where the drum contents have a tendency to pile up under the combined action of drum rotation and gravity. This prevents by-passing of parts of the drum contents and results in a uniform treatment in a min. of time even when the max. temps. required are low. Used in the treatment of potato chips, unfreezing of deep frozen food, prepn. of toast, roasting of meat, boiling of raw potatoes.</p> |
