The fatfree dispersion may be obtained by (a) osmosis-dialysis of skimmed milk and/or whey against water, (b) by suspending in water, ground plants containing albumin and removing excess carbohydrates by elutriation and dispersing the slurry residue in water or (c) bacterially acidulating skimmed milk at 38- 45‹C then centrifuging off the liquid and dispersing the dry residue in water.
