The device includes an elongate base 4 with an open V-shaped groove 5 over its length in which there are positioned an eddy current measurement sensor 1 and input and output guide elements 2, 3 for the product in the sensor, flanges 11, 12, 13 mounted so as to pivot above the said groove between a position of clamping the various elements 1, 2, 3 in the groove or opening the groove, and means 90, 92, 17 actuating the flanges in one of the clamping or open positions. The device allows products coming from roll mills or other treatment machines to be monitored. <IMAGE>
