Compsn (I) consists of a stable suspension of 20-60 pt. starch paste, 1-12 pt. egg white and 30-70 pt. vegetable oil. (I) has a similar appearance, taste and texture to commercial mayonnaise. It contains no egg yolk (hence no cholesterol) and has a shelf life of 6-9 months. |
