<p>Stone-fruit such as apricots are peeled by exposing them to satd steam at high pressure, followed by a sudden pressure relief. Subsequent to the pressure relief, the fruit is uniformly heated throughout by exposure for 45-150 sec to a steam/water mixt. of over 100 degrees C. The peeled fruit is made immune against discolouration during the following storage period before the next processing stages. Peeling and stoning is facilitated. The process can also be used for mirabelles, plums and green-gages.</p> |
