<p>The mould consists of an upper and lower die, both consisting of a mesh of stainless steel wires, coated with a plastic. The stationary lower die has both faces lined with a similar mesh rigid. The upper die includes a closure to keep the ham in a pressed state during the processing stages. Smoke and heat have unimpeded access to the ham. It saves cost and labour and can be easily adapted to different sizes. The final product has a uniform cylindrical shape with smooth cutting faces.</p> |
