<p>The enzyme, having a very low esterase or lipase content, is produced by cultivating a strain of Mucor miehei NRRL 13042 or a variant or mutant species of this strain, isolated naturally or artificially. Veal rennet is generally used at present for coagulating the milk but fluctuates quantity and quality. The coagulants do not have an adverse effect on the cheese such as is produced by lipase or esterase. Excellent tasting cheese may be obtd. in very good yield.</p> |
