The compound may be dissolved in an organic solvent or encapsulated in a water soluble encapsulating material. Preferred solvents are propylene glycol, and arachis or maize oil. Encapsulating materials may be gum acacia, starch, alginates, dextrose, lactose or glucose syrup, or a protein. The flavouring compound may be 6-allyl guaiacol, 2-propoxy phenol, or 2-alloxy phenol, and may be present in a proportion of 0.01 to 0.6% based on the wt. of solvent. Flavour concentrates for use in sausage meat may comprise additional flavourings e.g. diacetyl, acetic acid, iso-valeric acid, caproic acid, 4-ethyl guaiacol, guaiacol liquid, 3-methoxy phenol, p-cresol, fenugreek extract, 4-methyl guaiacol, maple lactone, and iso-eugenol. |
