1491997 Food thickener compositions MERCK & CO INC 28 July 1976 [1 Aug 1975] 31509/76 Heading A2B A food thickener composition comprises a soluble alginate, a galactomannen gum, a suquestrant and a weak acid salt. The alginate may be Na or K alginate; the gum may be guer or locust bean gum; the suquestrant may be sodium hexametaphosphate, trisodium phosphate, tetrasodium pyrophosphate, sodium tripolyphosphate or sodium acid pyrophosphate, or a salt of glucosine, citric or tartaric acid; and the weak salt may be sodium carbonate, bicarbonate or citrate. A preferred composition is 40-85% sodium alginate, 3- 30% guar gum, 3-25% sequestrant and 1- 15% weak acid alkali metal salt. The composition can be incorporated in a slurry in an amount of 0.1-5% by wt. together with comminated meat, fish, poultry, diary products, fruit or vegetable, and a binder e.g. starch or corn meal; treated with e.g. 1.5-7% strength Ca Cl 2 solution to form a skin, after moulding; and then e.g. battered or breaded and fried, coated with chocolate or sugar, or used as a pie filling and cooled or frozen. Typical products are onion rings, fish sticks, meat or fowl nugget, patties, egg roll, fruit rings or pies and ice cream. |
