The process is intended to make possible the mechanical separation of skin from salted, spiced or otherwise pretreated fish without, or with only slight, losses of flesh. For this purpose, the skin of the fish is denatured by bringing it into contact with acetic or citric acid having a temperature of 14 to 20 DEG C, after which, the fish for separating off the denatured skin, is washed with a liquid fed under pressure. The apparatus for carrying out the process includes a conveyor belt which has in part a number of elongated, endless conveyor means (31) and in part a number of solid guide means (32), each of which are directed towards a rotating knife (38) furnished with a double blade (40). A subsequent conveyor belt (3) extends in part beneath a denaturing station (9) having distributor nozzles (11) for delivering acid and in part beneath a rinsing station (16) having flushing nozzles (17, 18) for a washing medium. A nozzle (48) is assigned to each knife (38), which nozzle directs a flushing jet between the blades (40) of the knife (38), in order to wash off fin residues, which have been sliced off by the knife (38). <IMAGE> |
