PURPOSE:To prepare a stock having unique taste by mixing meat of crab and lobster with crab guts and boiling the mixture with MISO (fermented bean paste) soup. CONSTITUTION:Carapace of crab and tail of lobster are removed, residual digestive tracts and gills are also removed and the obtained meat is washed with water. Separately, MISO containing about 10% of salt is kneaded with water, the above meat of crab and lobster are added together with separately collected crab guts to the above mixture and kneaded by a mixer. Particles of carapace, etc., are removed by filtering the kneaded material with a fine-mesh filter and the obtained solution is bagged in vacuum and quickly frozen. |
