<p>Hard sugar is measured into a mould lined in Teflon for anti-stick purposes and at once spun round at 200 r.p.m. so that the sugar is thrown onto the walls of the mould where it cools and solidifies. The mould passes on below a filling nozzle for piping fill into the sugar case now set in the mould, followed by a second sugar nozzle to place a lid of the same hard sugar substance on to the case and filling in the original mould. Several layers of filling can be used, or of the case material, supplied successively into the mould to form a laminate. Stick sweets can be made by inserting the stick into the substance before completely set.</p> |
