The invention concerns a method and a layout for production of a dairy product, wherein one uses skim milk together with a selected vegetable fat. The method begins with use of liquid or powdered skim milk, wherein the latter is reconstituted at regulated temperature of at least 70 degrees Celsius and then combined with a warm water/oil emulsion, after which necessary and suitable quantities of vitamins A, D3 and C are added. The layout has a first area 1-4 in which the powdered milk is reconstituted, while this area can be excluded in the event of using liquid skim milk; a warm water/fat emulsion area 7, 18-21; an area 8 for spraying the water/fat emulsion into the milk; static and dynamic blenders 9; standardisation tanks 11 and storage tanks 14 until the time for ultrapasteurisation. The animal fat in the milk, which is rich in saturated fatty acids and cholesterol, has been removed and largely replaced with oils which contain abundant mono- unsaturated fatty acids, e.g., olive, sunflower and peanut oils. The dairy product preserves all advantages of skim milk and also those which are achieved by the selected vegetable oil and the addition of vitamins A, D3 and C. <IMAGE>
