METHOD FOR PRODUCING PECTIN FROM VEGETAL RAW MATERIAL

The present invention relates to a method for producing pectin from vegetal raw material, wherein said method involves processing the starting vegetal raw material in order to prepare it and further separating an extract therefrom by acidic hydrolysis and by extraction in two separate steps. The acidic hydrolysis is carried out by diluting the vegetal raw material with water and by adding first hydrochloric and then phosphoric acids thereto, wherein the mass to be hydrolised is mixed during the addition of the acids. The extraction of pectin from the hydrolised mass is carried out with pure water while continuously mixing the mass and periodically modifying the pressure within a range of 1 to 4 Pa. The extract thus obtained is further concentrated, purified and dried.
