PROBLEM TO BE SOLVED: To provide a cheese-like food with a good flavor.SOLUTION: A method for manufacturing a cheese-like food includes fermenting a soybean milk with a novel lactic acid bacterium: Lactobacillus pentosus LS-26 (NITE P-01929). The cheese-like food is free from the odor peculiar to a fermented soybean milk, having a lemon-like flavor and a very smooth texture. Lactobacillus pentosus LS-26 is a lactic acid bacterium resistant to the gastric acid and the intestinal juice.SELECTED DRAWING: None |
