PURPOSE:To provide a method for production of a refined rice wine capable of inhibiting growth of Hiochi bacterium even in case of infection therewith during storage of the refined rice wine or after bottling thereof and capable of preventing rancidity. CONSTITUTION:Nisin or a nisin-containing solution is added, to a refined rice wine in which protease is deactivated or removed.
