PURPOSE:To provide the subject sweet stuff suitable for jam, ice cream or the like, containing a specific liquid trehalulose more than a prescribed amount, thus having low tooth decay, good sweet taste and odor, excellent stability, crystallization resistance, color and gloss. CONSTITUTION:Liquid trehalulose containing 70 to 90wt.%, on the solid basis, of 1-0-alpha-D-glucopyranosyl-D-fructose (trehalulose) is used as a starting substance to provide sweet stuff containing more than 70wt.% of trehalulose based on the total saccharides. |
