<P>PROBLEM TO BE SOLVED: To obtain boiled rice or a boiled rice processed product having low adhesive property of boiled rice grains each other when making boiled rice, free from being too hard, and softly aging after gelatinization of starch. <P>SOLUTION: The boiled rice or the boiled rice processed product is obtained by an adjusting method of items as follows: (1) selecting polished rice having surface layer hardness measured with a rice master of ≥15 kg/cm<SP>2</SP>of polished rice powder and surface layer aging degree of ≤100; (2) heating the polished rice together with oil and fat followed by soaking in water and boiling, or heating the polished rice without substantially adding water, and soaking the polished rice in water followed by boiling; and (3) bringing boiled rice surface layer hardness measured with a tensipresser after storing for 2 h at 25°C after warming, to 100,000 dyn, bringing a surface layer adhesion amount to ≤1.2mm, and bringing boiled rice aging index measured with a tensipresser after storing in an eating condition for 24 h at 5°C after warming, to ≤200. <P>COPYRIGHT: (C)2007,JPO&INPIT |
