Raw meat pieces obtained by boning poultry are mixed with an edible metallic salt to form an adhesive protein coating on the pieces, which are then impelled through a closed elongated zone into an extrusion nozzle of reduced cross-section to press the pieces into solid contact and knit them into a continuous shape-retaining loaf, preferably in the form of a rectangular bar, which may be severed transversely. The pieces are preferably elongated, and preferably at least 60% are parallely aligned to the longitudinal axis of the bar. Preferably the light and dark meats are separately treated, and are passed to an extruder having a dividing plate reaching almost to the outlet, whereby a product having distinct white and dark areas is obtained. The product may be cooked. |
