PURPOSE:To produce thin-film food of good taste by casting a hot mixed paste of a specific base and food or beverage into a shallow mold, solidifying and drying. CONSTITUTION:A food base is prepared by mixing KONNYAKU (devil tongue) gel which is formed by combining 1pt. of KONNYAKU powder with 25-40pts. of water with stirring to effect swelling, with carrageenan at a ratio of 10:(0.5-1.2). The food base is mixed with, when needed, auxiliary materials selected from hydrolyzed gelatin, locust bean gum, and gluten, and food and beverage such as vegetables, fruits, animal and fish meats processed foods, and heated over 90 deg.C to form a paste. The paste is cast into shallow molds, solidified by cooling and dried, until the water content is reduced to 15% or lower, and, when needed, milled. |
