PROBLEM TO BE SOLVED: To provide a method for cooking meat, by which the meat can easily be cut without needing large labor and output and substantially without deteriorating the good taste of the meat. SOLUTION: This method for cooking the meat, comprising a pre-treating process comprising (#2) an injection process for injecting a pickling liquid into the pork meat to soften the meat and (#3) a tumbling process for carrying out a tendering treatment to cut the tendons of the pork and so on, (#4) a chilling process for cooling the pretreated pork at a temperature in a chilling temperature range, (#5) a cutting process for cutting the chilled pork into prescribed shape and size, and (#6) a post treatment process for adhering bread flour to the cut port. |
