NEW MATERIAL:A 2,5,8-undecatrien-2-ol shown by the formula 8 (R is H, or COOH) or its ester. EXAMPLE:(Z,Z,A)-2,5,8-Undecatrien-1-ol. USE:Useful as a durable imparter for fragrance and flavor, or an improving auxiliary. Having fragrance and flavor to remind of fruit and marine product, for example, it is blended with a spice composition of fruit type, vegetable type, citrus fruit type, spice type, foreign wine type, roast nut type, tobacco type, etc., and used as a durable imparter for fragrance and flavor, and for improving and enriching same. PREPARATION:For example, 2-pentenyl bromide shown by the formula 1 is reacted with propargyl alcohol tetrahydropyranyl ether shown by the formula 2, hydrolyzed in the presence of an acid, to give a compound shown by the formula 3, which is catalytically hydrolyzed in the presence of Lindlar catalyst, reacted in the presence of phosphorus tribromide and pyridine under heating to give a compound shown by the formula 5, which is subjected to the same reaction, to give the example compound (A-1). |
