PROBLEM TO BE SOLVED: To impart sufficient strength or elasticity to gel like matter, to make the gel like matter excellent in heat resistance and to prevent the deterioration of physical properties at a time of use or keeping by charging a dispersion of polysaccharides in a baking mold and heating the same to form the gel like matter and taking out the gel like matter to immerse the same in hot water. SOLUTION: At first, a dispersion of polysaccharides is charged in a baking mold 1 and heated to 85-95 deg.C for 1-5min to form gel like matter. This manufacturing process especially accelerates the gelling of the surface layer part of the gel like matter. The gel like matter is taken out of the baking mold 1 to be immersed in hot water of 20 deg.C or more at least for 5-10min. This manufacturing process accelerates the gelling of the interior of the gel like matter of which only the surface layer part is gelled in the previous process. Since gelling is accelerated by two-stage processes as mentioned above, the gel like matter is excellent not only in strength or elasticity but also in heat resistance. Further, physical properties at a time of use or keeping are not deteriorated and the gel like matter having high commodity value is obtained. |
