PURPOSE:To obtain a processed bean-curd product useful as an additive for foods, excellent in taste, eat feeling, color, mixing property and functionality by degranulating bean-curd refuse to hydrate water soluble polysaccharides and bringing the refuse in to a highly viscous liquid. CONSTITUTION:Bean-curd refuse is treated without adding water or hydrated with adding water to degranulate accompanied by delivering interfibrillar materials, then by adding water to hydrate and hydrating water soluble polysaccharides under agitation to obtain a highly viscous liquid which is the objective processed product. |
