PRODUCTION OF PLASTICIZED OIL AND FAT HAVING LOW CONTENT OF TRANS ACID

PURPOSE:To obtain the plasticized oil and fat usable for edible processed oils and fats such as margarine or shortening, having a low trans acid content and a wide range of plasticity. CONSTITUTION:Hydrogenation reaction of oil and fat is carried out in the presence of a noble metal catalyst such as palladium or platinum and sodium methoxide as a catalyst used for transesterification at 60-120 deg.C under a nonselective hydrogeneration condition.
