Elements formed from compositions comprising edible starch materials and containing sugars are fried in a two-stage process, which comprised firstly frying in oil to a moisture content of 5-20 wt. per cent and then frying in oil at reduced pressure and at a temperature not exceeding 100‹C. to a moisture content not exceeding 2.5 wt per cent. Suitable starting materials include potato products such as mashed. potato, potato powder or potato pieces, potato starch, milled cereal grain, and cereal starch. The elements may be formed with the aid of liquids such as milk or water. Binding agents, for example methylcellulose, waxy maize starch, or guar or locust bean gum, may be present. Monoglycerides and flavourings may be added. The elements may be formed from pastes by moulding or extrusion.
