FIELD: food industry.SUBSTANCE: invention relates to production process for kvass beverage. Recipe ingredients are prepared. At that, lime peel extraction with liquid carbon dioxide to separate corresponding miscella, cutting, its drying in microwave field till residual humidity about 20 % at microwave filed power providing warming of girasol-sunflowers inside bits till temperature of 80-90 °C for at least of 1 hour. Then roasting, impregnation with separated miscella with simultaneous pressure increase and reduction of pressure to atmosphere pressure with simultaneous freezing of girasol-sunflower. Then crushing and mashing together with dry bread kvass and hot water and settling three times with separation of liquid phase from pulp to produce kvass wort. Addition to obtained wort of 25 % of the recipe quantity of sugar in form of white syrup. Mixture of pure cultures of fermentable yeast of kvass race and lactic acid bacteria M races 11 and 13, blended with the remainder of sugar syrup as a white and dispensed.EFFECT: method allows to reduce duration of process and increase foam stability of target product.1 cl |
