PROBLEM TO BE SOLVED: To provide a method of producing a jelly containing carbon dioxide gas and suitable for mass-production. SOLUTION: The objective jelly is produced by preparing a liquid jelly raw material containing a gelling agent, cooling the prepared liquid jelly raw material under flowing to form a fluid gel, introducing carbon dioxide gas into the fluid gel under pressure, sealing the carbonated fluid gel in a container, heating the sealed container to convert the fluid gel into sol and cooling the container to gelatinize the content of the container. |
