PURPOSE:To obtain salad eel having high nutritive value, by concentrating extract, extracted by boiling the salad eel, under reduced pressure. CONSTITUTION:A salad eel extract formed by concentrating extract, extracted by boiling the salad eel, under reduced pressure. The extract can be used as soup base, stock or a seasoning for various kind of processed foods as well as a nutritive agent, health food, base for foods, etc., since the extract is extracted from the salad eel having high nutritive value. In the formation of the above-mentioned extract, separation of the extract from the solid content may be carried out by using a centrifugal separator or other means such as a standing type separator. The resulting extract may be concentrated after filtration or deodorized before filtration. |
