PURPOSE:To obtain a delicious food from a male capelin, and to improve the commercial value of a male capelin, by removing the guts from a male capelin, and filling the abdominal cavity with cheese. CONSTITUTION:The guts 2 of a male capelin 1 is sucked with vacuum, and the abdominal cavity 3 is thoroughly cleaned. The capelin is seasoned, immersed in an antioxidant, and cooled with cold air stream. A rod cheese 4 is filled in the abdominal cavity 3, and the capelin is dried for several days with cold air stream to improve the compatibility of the capelin with the cheese.
