PROCESS FOR INCREASING THE PROTEIN CONTENT OF PLANTS

Described is a process for increasing the protein content of plants, in particular tuberous plants such as sweet potato, potato, yam, manioc, taro and tania plants, wherein first a construct is produced by combining constitutive or tissue-specific transcription-regulation signals with a cDNA fragment for a protein that can be deposited in the plants as a quasi-crystalline structure and then the construct is used to transform plants, especially tuberous plants. In this way the protein content of potatoes, for exemple, can be increased 1.8 to 4.2-fold.
