A poultry leg hanging from a carrier (4) and comprising a drumstick (8) is processed by (a) cutting around the drumstick in the vicinity of the tarsal joint by incision(s), and (b) separating a part of the leg comprising the incision(s). The carrier is moved onwards during step (a). An Independent claim is also included for a device for processing the poultry leg, comprising a conveyor (2) having the leg carrier; transverse incision mechanism for cutting around the drumstick in the vicinity of the tarsal joint; and a separation mechanism for separating a part of the leg comprising the incision(s). The conveyor and the transverse incision mechanism are adapted to cut while the leg is being conveyed along a conveyor path.
