PURPOSE:To obtain a method for producing noodle having at least 5 day palatable period and further, capable of preparing raw noodle excellent also in taste and texture, etc., in good noodle producing properties and high efficiency. CONSTITUTION:In producing noodle using an automatic noodle producing machine provided with a grain flour storage means, a kneading means for producing powered fish-like noodle dough by stirring the grain flour fed in a definite amount from the grain flour storage means together with a kneading water, a rolling means for forming into a noodle sheet by feeding powdered fish-like noodle dough produced by this kneading means to the space between a pair of rolling rollers and rolling the dough, a cutting means for cutting into long strips of noodle by feeding the noodle sheet to the space between a pair of cutting rollers and a feed-out means for feeding out these long strips cut by this cutting means by dropping these long strips onto a conveyer, the objective method for producing noodle is characterized by blending a preservability improver in kneading water or raw material powder. |
