PROBLEM TO BE SOLVED: To obtain the subject substance with high affinity for starch, and to provide a use of the substance. SOLUTION: This substance is obtained by subjecting any plant served as daily food (e.g. beans, potatoes or potato-like vegetables, teas, crude drugs) to extraction with water, an organic solvent or a mixture thereof. This substance, because of having high affinity for starch, exhibits α-amylase inhibitory activity through binding to starch; by regulating its amount to be added, the amount of the degradation and the rate of degradation of starch can be regulated. This substance is used in food and feed, or as a medicament, being useful for diet and in treating diabetics. |
