Device for producing boneless fillets

The invention relates to a device for producing boneless fillets from fish from which the heads have been removed. To this end, it is proposed to add a cutting tool to be arranged between the scraping tool and the back and/or belly filleting tool to the filleting machine which is equipped with scraping knives for removing the belly flaps of the fillets from the ribs of the skeleton and is known from DE-PS 2946042, and to assign a further function to the scraping tool. By means of the additional cutting tool, the fish is provided with incisions which extend above the row of upright bones and extend from the belly cavity end to the surface from which the head has been cut and into which the scraping knives which can be pivoted out laterally are introduced. The known scraping process is then carried out together with the making of incisions at the belly cavity end which separate the belly flaps from the rest of the fillet and results in the production of belly flaps containing the upright bones and boneless fillets.
