PROBLEM TO BE SOLVED: To obtain a boiled egg in a sugared fish powder of yolk, having freezing resistance, not being limited in its use, by finely cutting boiled egg, adding a saccharide and a sugar alcohol and freezing. SOLUTION: Boiled eggs after removal of eggshell are cut into a dice shape, etc., or crushed, mixed with 3-30wt.% based on the eggs of one or more of a saccharide and a sugar alcohol, cooled in vacuum immediately after heating and frozen. The frozen boiled eggs will not separate water, are excellent in texture, do not cause freezing denaturation and have appearance and texture close to those of boiled egg immediate after boiling. |
