PROBLEM TO BE SOLVED: To obtain a roasted cow tongue excellent in shelf stability, useful as a souvenir, etc., readily edible only by warming a little, by packing roasted seasoned cow tongue in a packing bag, degassing and sterilizing by heating. SOLUTION: A cow tongue is sliced, seasoned, roasted and packed into a packaging bag. Air in the bag is removed and the bag is sealed, immersed in hot water and sterilized. The bag is preserved in a refrigerator and the roasted cow tongue is warm without roasting. The roasted cow tongue is more excellent in taste by heating in hot water in a stored state in the packing bag than by heating by a microwave oven. |
